Plum Cake

Plum Cake

I wish all my readers a very Happy Christmas.How can a christmas go without a christmas cake , so i'm here with a Christmas special plum cake.Since i started baking i bake this plum cake once in a year,that to only on
a Christmas day. Its a rich cake with all dry fruits and nuts making it more delicious.I don't actually remember from where i have adopted this recipe from,as i had it written it on a piece of paper,it  might be from joy of baking as i refer it for most of  my baking.You can also have it as a snack along with a cup of tea.

Ingredients:

All Purpose Flour/ Maida : 1 Cup + 1 Tbsp
Softened Butter: 1/2 Cup
Sugar: 1 Cup
Eggs:3
Dry Fruits:1 Cup
Dry Nuts:1/2 Cup
Orange Zest :1/2 Tsp
Spice Powder: 1 Tsp ( Clove,Cinnamon ,Nutmeg ,Dry Ginger)
Salt:1/2 Tsp
Baking Powder: 1 Tsp
Cooking Soda:1/4 Tsp

For caramel Syrup:
Sugar:1/4 Cup
Water: 1 Tbsp
Warm Water: 1/4 Cup
Vanilla Extract: 1 Tsp

Method:
1.On a medium heat,heat 1/4 cup sugar with 1 tbsp water and keep stirring continuously until color changes from light brown to dark brown.(I was  not able to click the color change transition photo).Once color becomes darker remove from heat and pour 1/4 cup of warm water . To this add vanilla extract and stir well..Caramel syrup is ready to use.


2.Grind 1 cup sugar to fine powder.Blend  sugar and butter by adding eggs one by one (3 eggs).


3.Sieve All purpose flour,baking powder,baking soda,salt.Mix spice powder to this.
4.Add caramel syrup to egg and sugar mixture(Step 2),add all above dry  ingredients (step 3) to wet ingredients and mix well in cut and fold method.


5.Coat the chopped dried fruits with 1 Tbsp of refined flour ,this is done to ensure that dry fruits does not sink to bottom while baking.


6.Add dry fruits,dry nuts and orange zest to the cake batter and mix well.


7.Line the baking loaf pan with butter paper,pour the cake batter.



If desired, sprinkle some nuts over the batter and bake in a preheated oven at 180 deg Celsius

Around 45 - 50 minutes or till the knife/ tooth pick inserted at the center comes out clean. 
  




 My Notes:
  • You can soak dry fruits in rum for 24 hrs to 1 week. 
  • Keep a cup water in a oven while baking to avoid sinking of cake in the center and to prevent cake from going dry.
  • Sprinkling nuts over cake batter wasn't helpful for me.

  1. Very nice cake..the caramel solidifies very easily after alittle color change.am not getting that dark brown color....is there any alternative for it?..

    1. Hey Soumi,
      Keep on low heat once it start getting dark brown colour,remove from heat and add 1/4 cup of warm water and stir well.It doesn't get solidify,if at all it happens stir so that solidified caramel syrup gets dissolved.

      Delete
