Palak Paneer Pulao / Spinach & Cottage Cheese Pulao



Palak Paneer who does'nt know about it,its a traditional punjabi dish.Knowing the benefits of spinach i often do palak paneer but Gp doesnt like it as much as I .So i wanted to try same palak paneer with a twist,by
preparing a pulao out of it. Just like any other pulao, i  prepared and yes....... surprisingly  it turned out very delicious than I actually  thought ! Give a try and enjoy this pulao with  onion cucumber raita!

Ingredients:

Basmathi Rice : 2 Cups
Spinach:250 Grams/ 1 Medium bunch
Paneer: 100 Grams
Green Chilly:2-3
Onion: 3 Large
Tomato:1 Medium
Ginger Garlic Paste: 2 Tbsp
Curd : 1/4 Cup
Pudeena: 1/2 Cup
Red Chilly Powder: 1 Tsp
Coriander Powder: 1 Tsp
Turmeric:1/2 Tsp
Coriander Leaves:2 Tbsp for garnishing
Lemon Juice: 1 Tsp
Raisines: 1/2 Tbsp (Optional)
Cashews:10  (optional)
Water:21/2  Cup
Oil: 1/4 Cup
Ghee: 2 Tbsp
Salt To Taste

Whole Spices
Black Cardamom: 1
Green Cardamom:3
Cloves: 3
Cinnamon: 1" inch
Bay leaf: 2
Fennel Seeds Powder : 1/2 Tsp
Stone flower: 1/2 Tsp
Star Anise:1/2
Mace: Small strand
Marath Moggu :2

Method:
Soak rice for 15 minutes ,drain water and keep it aside.



Blanch Spinach in hot water and salt,drain water. Add green chilies to spinach and puree it in a mixer.




Heat oil and ghee in a thick bottom pan or a pot.Add all the whole spices,cashews and raisins.



Add shredded onions, pudeena and fry well till onions are translucent. Add G+G paste fry well.



Add paneer  cubes saute for a minute.Add tomatoes and fry well till raw smell goes off.



Add  red chilly powder,coriander powder and saunf/fennel powder and fry well. Add spinach puree ** (See Note) and saute for 2-3 minutes.



Add drained  rice,mix well and fry on medium to high heat for 3-4 minutes.




Add  hot water ,salt ,close the lid and cook till done.



Finally add lemon juice  and coriander leaves ,serve hot with raita.



My Notes:
1.** Measure the quantity of spinach puree using measuring cup ,so that you can adjust water content accordingly to cook rice. My spinach puree measured 1 Cup so i added only 21/2 cup of water for rice to get cooked.
2.I used only 100 grams of paneer , i felt it was bit less better to add 200 grams.
