Banana Muffins

Banana Muffins
These Banana Muffins are light and fluffy,great in taste with a nice flavor of Banana. These goes on very well as a snack or breakfast.I always enjoy Baking , if you haven't tried
baking then this is a very simple and perfect recipe for all of you to give a try as it is fool proof. You can never go wrong with this banana muffins just follow the measurements and you'll end up with light and fluffy aromatic banana muffins.A perfect accompaniment in winter with a cup of  hot coffee .

Ingredients:

Preptime: 10 Min  | Cooking Time:20 Min | Makes : 8 Small

All Purpose Flour: 3/4 Cup
White Sugar: 1/4 cup + 2 Tbsp
Banana Robusta : 1 1/2 large
Egg:1 
Butter Melted:1/4 Cup
Baking Powder: 1/2 Tsp
Cooking Soda:1/2 Tsp
Salt:1/4 Cup

Method:
Preheat oven 180 Deg Celsius.Grind sugar to fine powder.Mash/puree banana.





In a bowl  break egg,add  sugar and beat in hand blender till frothy.Add melted butter and mashed/puree banana and blend well. 



Sieve refined flour,baking powder,baking soda and salt.Add flour to the above wet mixture slowly.



Line the muffin tins and fill the batter to 2/3 of cup and bake for 18-20 minutes or till the top looks golden brown.



Enjoy hot muffins directly from the oven with a cup of coffee/tea.



My Notes:
1.Muffin batter consistency will be stiffer,its consistency lies between that of cake batter and cookie dough.
2. Don't over mix the batter or else you'll end up having dense muffins. 
3.Baking time varies from oven to oven and also on size of muffin cups, so keep checking your muffins after 13 minutes,till top turns light golden brown in color.
